Stuffed Peppers

Ingredients

  • 6 large bell peppers tops cut off, cleaned
  • 1/4 cup olive oil
  • 1/2 cup onion chopped
  • 1 large clove garlic minced
  • 3/4 lbs. ground beef
  • 3/4 cup parmesan cheese
  • 2 cups rice cooked (should be 2 cups cooked)
  • 3 tsp. parsley
  • Salt & pepper to taste
  • 3 Tbs. red wine
  • 3/4 cup tomato juice

Instructions

  1. * Cook rice & set aside.
  2. * Turn peppers upside down in a large pot with 1 inch of water.
  3. * Bring water to boil and cook, covered, for 5 minutes.
  4. * Remove peppers from pot and drain on towel.
  5. * Add olive oil to large skillet, add onion & garlic and cook until soft. Add meat and cook until lightly browned.
  6. * In a large bowl, combine meat mixture, Parmesan cheese, rice, parsley, salt and pepper, and wine.
  7. * Add this mixture to the peppers, stuffing completely.
  8. * Place all peppers in a 9x13 baking dish, open end up.
  9. * Pour tomato sauce over peppers.
  10. * Bake at 350 degrees for 30-40 minutes.
