Stuffed Peppers
Ingredients
- 6 large bell peppers tops cut off, cleaned
- 1/4 cup olive oil
- 1/2 cup onion chopped
- 1 large clove garlic minced
- 3/4 lbs. ground beef
- 3/4 cup parmesan cheese
- 2 cups rice cooked (should be 2 cups cooked)
- 3 tsp. parsley
- Salt & pepper to taste
- 3 Tbs. red wine
- 3/4 cup tomato juice
Instructions
- * Cook rice & set aside.
- * Turn peppers upside down in a large pot with 1 inch of water.
- * Bring water to boil and cook, covered, for 5 minutes.
- * Remove peppers from pot and drain on towel.
- * Add olive oil to large skillet, add onion & garlic and cook until soft. Add meat and cook until lightly browned.
- * In a large bowl, combine meat mixture, Parmesan cheese, rice, parsley, salt and pepper, and wine.
- * Add this mixture to the peppers, stuffing completely.
- * Place all peppers in a 9x13 baking dish, open end up.
- * Pour tomato sauce over peppers.
- * Bake at 350 degrees for 30-40 minutes.
