Bacon Beef Chile
Ingredients
- 1 1/2 lbs. Ground Beef
- - 6 strips Bacon Strips chopped
- - 1 can Pinto beans drained
- - 1 can Black Beans drained
- - 1 can Fire roasted diced tomatoes
- - 1 6 oz tomato paste oz
- - 1 large red onion diced
- - 1 red bell pepper seeded & chopped
- - 1 jalapenos, seeded & chopped
- - 2 cups beef stock
- - 1 tablespoon dried oregano
- - 1 1/2 teaspoons ground cumin
- - 2 teaspoons kosher salt
- - 1 teaspoon black pepper
- - 1 teaspoon smoked paprika
- - 2 tablespoons chili powder
- - 1 tablespoon worcestershire sauce
- - 4 cloves garlic minced
Instructions
- METHOD:
- 1. Cook using a slow cooker
- 2. Saute bacon until crisp stirring often to c ook evenly about 10-12 minutes. Remove the bacon to paper towels .
- 3. Add the onions and peppe3rs and cook until tender, about 5-7 minutes. Add the meat and cook until browned.. Drain off any excess grease.
- 4. Add all the remaining ingredients and 3/4 of the bacon and stir to combine.
- 5. Turn the slow cooker to high and cook for 3 hours, or set at low and cook for 6-7 hours.
- 6. Serve with sour cream, cheese, onions and a little bacon
