Bacon Beef Chile

Ingredients

  • 1 1/2 lbs. Ground Beef
  • - 6 strips Bacon Strips chopped
  • - 1 can Pinto beans drained
  • - 1 can Black Beans drained
  • - 1 can Fire roasted diced tomatoes
  • - 1 6 oz tomato paste oz
  • - 1 large red onion diced
  • - 1 red bell pepper seeded & chopped
  • - 1 jalapenos, seeded & chopped
  • - 2 cups beef stock
  • - 1 tablespoon dried oregano
  • - 1 1/2 teaspoons ground cumin
  • - 2 teaspoons kosher salt
  • - 1 teaspoon black pepper
  • - 1 teaspoon smoked paprika
  • - 2 tablespoons chili powder
  • - 1 tablespoon worcestershire sauce
  • - 4 cloves garlic minced

Instructions

  1. METHOD:
  2. 1. Cook using a slow cooker
  3. 2. Saute bacon until crisp stirring often to c ook evenly about 10-12 minutes. Remove the bacon to paper towels .
  4. 3. Add the onions and peppe3rs and cook until tender, about 5-7 minutes. Add the meat and cook until browned.. Drain off any excess grease.
  5. 4. Add all the remaining ingredients and 3/4 of the bacon and stir to combine.
  6. 5. Turn the slow cooker to high and cook for 3 hours, or set at low and cook for 6-7 hours.
  7. 6. Serve with sour cream, cheese, onions and a little bacon
  8. SERVINGS: 8
