Red Beans & Rice Stuffed Peppers
Ingredients
- 4 Bell Peppers (red) topped/cored
- 1 Tbs Extra virgin olive oil
- 2 stalks celery
- .5 pkg riced caulifower
- 6 oz brown rice cooked
- 11 oz sausage or kielbasa chopped
- 2 Tbs Cajun
- .5 cup Monterey jack cheese grated
- 2 Tbs Green onions sliced
Instructions
- fry onion and celery until soft
- Add cauliflower, rice, meat, beans, and Cajun
- Saute 5-7 minutes stirring constantly
- Stuff peppers and top with cheese
- put in 9x9 pan
- fill pan with 1/4 inch water
- bake at 400 25-30 mins
- garnish with green onion and serve
