Red Beans & Rice Stuffed Peppers

Ingredients

  • 4 Bell Peppers (red) topped/cored
  • 1 Tbs Extra virgin olive oil
  • 2 stalks celery
  • .5 pkg riced caulifower
  • 6 oz brown rice cooked
  • 11 oz sausage or kielbasa chopped
  • 2 Tbs Cajun
  • .5 cup Monterey jack cheese grated
  • 2 Tbs Green onions sliced

Instructions

  1. fry onion and celery until soft
  2. Add cauliflower, rice, meat, beans, and Cajun
  3. Saute 5-7 minutes stirring constantly
  4. Stuff peppers and top with cheese
  5. put in 9x9 pan
  6. fill pan with 1/4 inch water
  7. bake at 400 25-30 mins
  8. garnish with green onion and serve
