Chili-Rubbed Skirt Steak With Tomato Corn Salad
Ingredients
- 8 oz skirt steak
- 1 Salt
- 1 pepper
- 1 tsp chili powder
- 1 tbsp olive oil
- 1 cup roma tomatoes diced
- 1/4 cup corn
- 1 tbsp red onions diced
- 1 tsp jalapenos
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- 1/2 tsp chili powder
- 1 cilantro
Instructions
- Steak
- Season steak with salt, pepper, and chili powder. Heat olive oil over medium heat in a grill pan. cook steak to desired doneness. transfer to cutting board, then slice into long slender strips about 1/4 inch thick.
- Salad
- combine, tomatoes, corn, diced red onions, jalapenos, olive oil, balsamic vinegar, chili powder, salt, and pepper. drape steak over salad. garnish with colantro and pinch of sea salt.
