Chili-Rubbed Skirt Steak With Tomato Corn Salad

Ingredients

  • 8 oz skirt steak
  • 1 Salt
  • 1 pepper
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • 1 cup roma tomatoes diced
  • 1/4 cup corn
  • 1 tbsp red onions diced
  • 1 tsp jalapenos
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1/2 tsp chili powder
  • 1 cilantro

Instructions

  1. Steak
  2. Season steak with salt, pepper, and chili powder. Heat olive oil over medium heat in a grill pan. cook steak to desired doneness. transfer to cutting board, then slice into long slender strips about 1/4 inch thick.
  3. Salad
  4. combine, tomatoes, corn, diced red onions, jalapenos, olive oil, balsamic vinegar, chili powder, salt, and pepper. drape steak over salad. garnish with colantro and pinch of sea salt.
