Stir-fry Pepper Beef
Ingredients
- 2 pounds Beef top sirloin steak sliced thinly across the grain
- 6 tablespoons Soy sauce
- 1/4 teaspoon Black pepper
- 1 teaspoon fresh ginger grated
- 1 teaspoon crushed red pepper
- 3 bell pepper (assorted colors) julienned
- 1 onion julienned
- 1 teaspoon sugar or granular splenda optional
- Salt and pepper
- 1 tablespoon sesame oil
- 1/2 teaspoon xanthan gum optional
Instructions
- 1. Slice top sirloin thinly (1/8“), across the grain
- 2. Combine soy and pepper in a small bowl and mix well
- 3. Put sirloin in plastic bag and pour over soy/pepper mixture
- 4. Squeeze extra air out of bag, seal and refrigerate for 1 hour
- 5. Heat cast iron pan or Wok (preferable) over medium high heat until very well heated (Be ready, the stir-fry will go very fast - have all your ingredients ready to go!)
- 6. Add half of the oil to pan
- 7. Add ginger and crushed red pepper and stir for 5 seconds
- 8. Add beef and marinade and stir-fry 1-2 minute (just until beef is no longer pink on the surface)
- 9. Remove beef mixture from pan
- 10. Add remaining oil to pan
- 11. Add peppers and onion to pan and cook 1-2 minutes (tender-crisp)
- 12. Return beef mixture to pan
- 13. Add sugar (or splenda), salt and pepper to taste and sesame oil
- 14. (optional) for a slightly thickened sauce, sprinkle xanthan gum over meat and stir in briefly
- 15. Serve!
